Matlagnings kurser: Italiensk gastronomi
 KURSEN: Upptäck italiensk och salentinsk gastronomi! Kursen hålls 2 timmar per vecka i ett fullt utrustat kök i skolan.
Studenterna förbereder typiska rätter för regionen. Praktik och teori blandas. Läraren är proffs på matlagning men ingen traditionellt utbildad kock.
Vi föreslår följande program, men det kan ändras efter studenternas speciella önskemål.
 Program:
- typiska "antipasti" från Italien och Apulien;
- hemmagjord pasta (orecchiette) enligt gammal tradition i Apulien;
- olika pastarätter;
- fisk och musslor;
- olika sorters "bruschette";
- traditionella sötsaker
GASTRONOMI I APULIEN-SALENTO: EN GAMMAL KULTURELL TRADITION
Lecce-provinsen har utan tvekan en mycket typisk medelhavs-känsla. Havet gör sig ständigt påmint och klimatet är varmt och gynnsamt för olivodlingar. Överallt frodas oliver och dessa blir till en fantastisk god olivolja. På många ställen alternerar man olivlundar med vinodlingar.
Vin är en av de största inkomstkällorna i regionen. Vinerna är kraftiga och lämpar sig väl för att göra vermouth.
Vin och olivolja är huvudingredienserna i det apuliska köket.
Kursen är bästa sättet att pröva sig igenom vad det lokala köket har att erbjuda. "Putèe" kallas de typiska restaurangerna på Salento-halvön.
Där kan man äta mat som i gamla tider: pasta gjord i huset, kakor med honung som äts med stekt fisk, sås gjord på torkad torsk och många andra specialiteter.
 
Alla dessa rätter har lånats direkt från olika kök långt bortom Salento, och det vittnar om att här möttes öst och väst en gång, och gamla civilisationer gör sig fortfarande påminda.
Start: varje vecka
Kurslängd: en eller flera veckor
Lektioner: 2 ggr per vecka (sammanlagt 6 timmar) ELLER 1 timme per vecka; matlagningskursen kan kombineras med den italienska kursen.

My head is still in beautiful Otranto. I had a great time meeting everyone
and being in such a stupendous place. I've been showing pictures and explaining
the Pizzica to everyone. I wanted to make a sauce with "ricotta forte"
but I couldn't find it here. I made pizza instead. The classes really
helped my understanding of the more difficult grammar as well. Thank you!
